Preparation time: 30 min

Ingredients for 4 persons:

  • 8 organic tomatoes  
  • 2 organic eggplants 
  • 1 jar of organic basil pesto (180gr) 
  • fresh basil 
  • oregano
  • a pinch of salt 
  • extra virgin olive oil 
  • 2 organic mozzarella, 180 g each
  • 400 g organic multi-cereal bread or organic bread replacers or crackers

Turn on your mediterranean mood by playing some traditional greek music.

Preparation of the Caprese salad with basil pesto

Wash and cut your eggplants in 1 cm-thick slice, then put them in a bowl and cover them with salt: this step is useful to make them expel some water. Let the eggplants rest for at least 20 minutes.

In the meanwhile, slice your tomatoes, put them on a plate and put your favorite grill on the fire for the eggplants.

Squeeze, dry and grill the eggplants for a few minutes on both sides, adding them to the plate with the tomato slices one by one.

Add salt, oregano, basil and extra virgin olive oil to your vegetables.

If you want to try something new, dress your salad with some other oil, instead of the extra virgin olive one: for instance, try the almond and avocado oil available among the Organicity’s products.
