Black rice salad with tofu and olives: discover a new taste!
Black rice has the big advantage to be both gluten free, such as every type of rice, rich of fiber and characterized by an intense flavor. For these reasons it’s for sure a perfect ingredient for people who follow a gluten free and/or vegan diet.
This ingredient is for example the base for a fresh and tasty preparing ready to be brought to the table: black rice with tofu and olives. It’s a pleasant combination of flavors and colours, that brings vitality to a quick lunch, healthy and tasty. Black rice releases a strong natural aroma, olives bring freshness and strong personality, tofu harmonises flavours and enriches the dish.
Here below some tips to personalize this dish with healthy and seasonal ingredients!
Ingredients for 2 persons:
- 140 gr of organic black rice
- 100 gr of natural tofu
- 100 gr of green olives
- 1 organic zucchini
- 100 gr of radishes
- Organic sesame seed oil
- Black pepper or fresh ginger (what you prefer)
Boil black rice in some water, meanwhile prepare vegetables and tofu.
Wash zucchini and cut it into julienne strips, like it was a carrot and then wash radishes and cut them into thin slices.
Cut tofu into little cubes and put it into a pan with some organic sesame seed oil and a pinch of salt and let it cook for 10 minutes.
At this point pour in a bowl all ingredients: black rice with tofu, olives, zucchini and radishes, a drizzle of sesame seed oil, and mix them together in order to amalgamate them uniformly.
You can add some black pepper or a little ginger to your dish, they’ll give a spicy touch to your lunch!
