SPECIAL SEAFOOD CROSTINI WITH PESTO

Why not end the summer with a bang by making a creative fresh dish to serve as an appetizer!!!
Crostini are a typical roasted bread appetizer accompanied by all sorts of vegetables, oils, cheeses, meats, and fish, throughout Italy. Here we suggest a seafood version, a combination of organically farmed shrimp and Italian Organic special Pesto Cream for a tasty summer delight to enjoy on the patio with friends.
INGREDIENTS: (4 servings)
- Organic Italian Ciabatta bread (1 large loaf)
- Organic Italian Olive Oil, white wine, and lemon juice
- Organically farmed fresh shrimp (400g)
- 2 jars of Italian Organic Ligurian Pesto Cream
- Parsley, lemon rind
INSTRUCTIONS:
- Peel and stir-fry the fresh shrimp in a wok with lemon juice, white wine, and olive oil until cooked.
- Toast the thickly sliced bread in the oven until golden brown. Add olive oil on top.
- Place on a dish and add a sizeable amount of pesto cream to each slice, place the shrimp on top, and garnish with lemon rind and parsley leaves.
Serve cold accompanied by a sparkling bottle of ice-cold Italian Organic Prosecco as a great appetizer!!
